So today is Pancake Day, Shrove Tuesday, Pancake Tuesday, Pancake in my face day. Whatever you call it the object of the day is to eat lots of yummy pancakes. Pancakes are one of the simplest things to whip up and you can guarantee to always have the ingredients to hand. I used a recipe from the Good Food website.
120g Plain Flour
2 Eggs
300ml Milk
This will make lots and lots and lots of slim little crepe style ones that I love. It does not, however, lend it self to thick American style pancakes. That I learnt the hard way, I can just see them now, all those wonderful wasted pancakes...sigh.
The recipe is fool proof, simply sift the flour into a large bowl. Make a well for the eggs in the middle, whisk the flour and eggs together while slowly adding the milk. Beat until your arm falls off or all the lumps are gone and you have a lovely smooth batter.
Let your batter rest for a while in the fridge. I used this time to grate some cheese, cook my eggs and eat half a packet of chocolate chips that my mum had definitely bought to make cookies with....oops.
I fancied a savoury one as well as the traditional sweet offerings, so I layered some ham, two eggs and lots and lots of very mature cheddar on top of one of my pancakes. Bung it under the grill to melt the cheese and then enjoy. I also slathered half a bottle of ketchup on top but that is because I'm addicted to the stuff, it would be equally nice without.
Of course though pancake day would not be complete with some lemon and sugar and Nuttela yumminess.
